The Definition of Whole Grain As a Nutritionist or Dietitian, it is important to understand just what whole grains are. Whole grains are members of the Gramineae (grass) family of plants that produce a dry, one-seeded fruit (caryopsis) which is commonly refered to as a berry, grain or kernel. Whole grain foods include all three parts of the grain kernel. The American Association of Cereal Chemists (AACC) defines whole grains as:

"Whole grains shall consist of the intact, ground, cracked or flaked caryopsis, whose principal anatomical components – the starchy endospern, germ and bran – are present in the same relative proportions as they exist in the intact caryopsis."

Whole grain products can be easily identified by checking the ingredient list. If the first ingredient is "whole wheat", "whole meal", or "whole corn" the product is a whole grain food. Or, if dietary fiber is listed as being a significant amount in the nutritional information, the product most likely contains whole grains. Terms such as "enriched" may indicate that the product lacks whole grains. Wheat, corn, rice and oats represent the largest share of whole grain food sales.
